First day of the week and I'm ready for another weekend to come soon.
Here is what I made for our dinner tonight.. broccoli rabe salad with baked fish. Yeah a little too healthy for Monday night... well... I'm trying to lose some weight. I haven't been going to Jazzercise for 3 months now, just feel tired all the times and don't have energy getingt up early in the morning on the weekend anymore, maybe I'm too old for that.
Anyhow... this recipe is quick and simple.
I marinated the fish with lemon juice, salt, pepper and unsalted spike (dried herb seasonings) and let it sit for couple of hours. Then bake in the 400-F degree oven for 25 minutes or depending on how big the fish is.

Since I couldn't find broccoli rabe at the grocery, I substitute with Tuscany Kale leaves and guess what... it tasted even better! My husband and I are really like it. If you like spicy, add extra chili flakes to the salad.
