What a long day... came home late, changed then go straight to the kitchen and prepared dinner.
It's a spaghetti night with fresh tomato sauce and garlic bread is on the menu.
Fresh tomato sauce??? Sound so complicated, well... actually not at all.
I prepared the tomatoes on Sunday so I don't have to spend too much time tonight.
Here is how to make it... blanch plum tomatoes in the boiling water for a minute or two, then peel the skin then chopped, reserve the juice and set aside in the close tight container place it in the refrigerator.
So tonight, what I did with the sauce is just caramelized red onion with chopped scallion with a little olive oil. Then pour the tomato, mash it with potato masher and leave some chunks, add salt, pepper, unsalted spike and cracked chili pepper.
Pour the sauce on top of the wheat spaghetti noodle, add parmesan cheese and fresh basil.
Serve with garlic bread with parmesan cheese and sliced olive.
My husband and I both agreed that this is a lighter side of regular spaghetti and tasted way better.
Glad tomorrow is Thursday which mean weekend is in the corner... woo.. hoo... can't hardly wait!!
